🍓 Recipe: Super Berry Muffins
Makes 12 muffins
Ingredients:
- 2 medium bananas, mashed
- 2 large eggs
- ¼ cup Greek yogurt
- ¼ cup honey
- 2 tbsp olive or coconut oil
- 1 cup whole wheat flour
- ½ cup almond flour
- 2 servings Blast Daily Reds
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup frozen blueberries
- Nuts or seeds for topping
Directions:
- Preheat oven to 180°C.
- Mix all wet ingredients until well combined.
- Fold in dry ingredients gently—don’t overmix.
- Stir in frozen blueberries. Spoon into a lined muffin tray.
- Top with seeds or chopped nuts.
- Bake for 18–22 minutes or until a toothpick comes out clean.
